French Bakers Linen Couche Cloth, 50x100cm Capers It protects it from exposureBakers linen is used for bread proving. Its also known as a bakers couche. The heavy material supports your dough while it proves, helping to maintain its shape. Fold the linen into sections to prove multiple loaves at a time. It prevents them from spreading and sticking together. Linen absorbs some moisture from the doughs surface without drying it out. This is the secret to bread with a crisp, golden crust. Linen is resistant to fraying and pilling.
